December is the month we bake the most, by far. For better or worse the kids and I make a lot of festive treats as a means to occupy the kids who are inside more and a way to celebrate Christmas. Of all the things we’ve made though, sometimes it is the simplest recipes that my kids appreciate the most. The ones with just a few ingredients, the least prep time and the most flavorful results. One of their most requested are these cream cheese mints which also make a nice gift if you wrap them in parchment and package in cardboard boxes. This recipe will make several dozen mints, depending on the size of your pastry tip and the amount you pipe out.
8 oz cream cheese
3 tbsp butter
1 tsp mint extract
7-8 cups confectioner’s sugar
*optional, sparkling sugar
Mix cream and butter, add mint then incorporate sugar 2 cups at a time. Refrigerate for about 1 hour before piping or rolling into small balls. Sprinkel with sparkling sugar and allow to dry for up to 3 hours, uncovered.
