If you follow me on Instagram, then you saw this smoothie bowl I posted on Thursday sans recipe. In case you’re wondering how it was made I thought this would be a better place to share the recipe. We have some sort of smoothie almost everyday, blame it on a lack of time or a lack or motivation to make a proper meal, either way it’s my quick way of feeding the kids without making a major compromise with nutrition. Also when it’s hot outside, like it was for a couple days last week, something cold always sounds best.
A little side note, I always keep frozen banana pieces in the freezer. Not only are they essential for making smoothie bowls but when we have an ice cream craving I usually opt for making “nice cream” out of these bananas and almond milk instead. If you top it with mini chocolate chips, sliced almonds and coconut flakes it really doesn’t feel like a compromise at all.
To make this particular bowl of blended food start with about 1 cup of almond milk, add in a handful of greens (usually spinach) and one pitted date. Blend these until the greens and date are basically liquified. Add your choice of protein powder, we use an vegan organic chocolate variety but it doesn’t matter much what you use. I also included a spoonful of almond butter, a dash of ground cinnamon and a handful or more of frozen bananas. I also keep berries in the freezer, frozen blueberries are especially good in bowls like this! Usually I top mine with raw pumpkin seeds but we were all out this day so I used another seed mix with sliced almonds, frozen fruit and this amazing Nordic Honey! The color isn’t the most amazing but of course that changes with your ingredients and ratios of each.
